Corned Beef Patties(tartlets)

This was a childhood favorite and have never seen it in print or when mentioned
Filling: 2 TBSP.butter         }saute'
1/4 cup chopped onions}
1 1/2 cup corned beef(12 oz can)
1 1/2 cup diced tomatoes
dash pepper
Dough: 2 cups flour                1/2tsp.salt
1 tsp. baking powder        6 TBSP.shortening
1 egg yolk  )mix together and add to other.
1/3 cup milk)
Cook filling slowly while mixing. about 5 minutes.

Make dough. Roll and cut into shape to fit either mini or regular muffin tin.

Fill each muffin 3/4 and bake at 350 degree for 25-30 min.

(depending on size)

Serve hot or room temp. Use remaining filling to serve on

top after baked.

What a surprise!
Mary Ellen - this was a favorite in our family, too. I am a grandmother who remembers these "corned beef cupcakes" from my childhood. In fact, they are still a favorite with my two older brothers. My mother would use her regular pie crust recipe for the base. I have not tried your recipe, but I certainly will. I, too, have never seen a recipe similar to this printed until now. Thanks for the "memory jolt".
