Country Fried Corn

Makes a great side dish with just about any meal. Healthy and low fat.
3-4 ears fresh sweet corn, cut from the cob
half of a large green pepper, diced
half of a red pepper, diced
half of a large sweet onion, diced
1T Canola oil
1T Butter (or light margarine)(or all canola oil)
Salt and Pepper to taste
1 can drained and rinsed black beans - optional
Melt Butter with Canola oil, add peppers and onions, saute for 3-4 minutes on med-high. Add corn, saute for 5 minutes on med-high. Salt and pepper to taste.

You may add a can of drained and rinsed black beans if you like. A dash of pepper sauce or finely diced hot peppers may also be added if your family likes it spicier.
