Crab & Corn Fritter Salad

1 pound lump crabmeat
1 c. corn kernels
¼ c. salsa
2 large eggs, beaten
3 tablespoons lemon juice
¾ cup all-purpose flour
1 ½ tablespoons baking powder
3 large egg whites, whipped until stiff
Olive Oil for Frying
Honey Lime Dressing (recipe below)
Mixed baby salad greens
1 clove minced garlic
½ cup lime juice
2 tablespoons honey
1 teaspoon Dijon mustard
1 tablespoon mayonnaise
¾ cup extra virgin olive oil
salt and pepper to taste

Mix together crabmeat, corn, salsa, eggs, and lemon juice. Next add flour and baking powder. Wisk egg whites until stiff peaks form. Fold egg whites into mixture.

In a large skillet heat 4tbs. of olive oil. Spoon large tablespoons of fritter batter into the skillet (the size of small pancakes. Brown each side until fritter is cooked thoroughly (roughly 4-5 minutes for both sides to cook, or until golden brown).

Set cooked fritters aside on a warming plate until all fritters are cooked. Add oil to skillet as needed for remaining fritter batter.

Serve hot over baby greens topped with Honey Lime Dressing.


In a bowl, mix garlic, lime juice, honey, mustard and mayonnaise until well blended. While stirring, slowly pour in the olive oil. Salt and pepper to taste.
