Crab/Wild Rice Soup

I 'invented' this for a creative cooking class. It has become a favorite of family and friends. I am fortunate to live on the Gulf Coast where fresh crab is available year round. Canned crab or shrimp can also be used.
RECIPE INGREDIENTS
Crab/Wild Rice Soup
1 box of Uncle Ben's wild rice
1/2  onion, chopped fine
1 cup mushrooms, sliced thin
2 tb butter
1 pint 1/2 and 1/2
1 can chicken broth
1 lb fresh crab meat
salt
white pepper
2 tbs sherry, optional
DIRECTIONS
Cook Uncle Ben's wild rice as directed.


In butter, saute onion and mushrooms until tender.


Add all ingredents in large pot and simmer for 10 minutes. Serve hot.


Great served with crusty French bread!
