Cranberry Cream Cheese Muffins
Makes 24 muffins
- 1 cup softened butter
- 8 ounces softened cream cheese
- 4 eggs
- 1 1/2 cups sugar
- 1 1/2 teaspoons vanilla extract
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups fresh or frozen cranberries
- 1/2 cup chopped pecans
Preheat the oven to 350 degrees F.
Beat together the butter and cream cheese until smooth and well blended. Add the eggs, sugar and vanilla extract and mix only until blended. Add the flour, baking powder and salt. Fold in the cranberries and pecans. Spoon into greased and floured muffin cups. Bake for 25-30 minutes.
Remove immediately from the muffin cups and allow to cool on a wire rack. These are best slightly warm.
