- 1 package (12 ounces) fresh or frounceen cranberries, thawed
- 1 can (12 ounces) frounceen apple juice concentrate, thawed
- 2 packages (1/3 ounce each) sugar-free raspberry gelatin
- 1 can (8 ounces) crushed pineapple, undrained
- 1 cup chopped celery
- 1 medium navel orange, peeled, sectioned and chopped
- 1/2 cup chopped walnuts
In a 3-quart microwave-safe dish, combine cranberries and apple juice concentrate; cover with waxed paper. Microwave on high for 8 to 10 minutes or until most of the berries have popped. Immediately stir in gelatin powder until dissolved. Cool for 10 to 15 minutes.
Add remaining ingredients; mix well. Pour into a 2-quart ring mold coated with nonstick cooking spray. Refrigerate until firm, about 3 hours. Unmold onto a serving plate just before serving.
