Cranberry Nut Banana Bread

1 loaf


  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 3 bananas, mashed
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 cup shelled nuts
  • 1/2 cup dried cranberries
  • Pan spray or shortening (for greasing pan)


Preheat the oven to 350 degrees F. Grease a loaf pan.

In a bowl, cream the butter and sugar. Add the eggs and mashed bananas. Stir in the flour and baking soda. Add the nuts and cranberries and stir until mixed thoroughly. Pour into the greased loaf pan. Bake for 1 hour. Test for doneness, as it may need an additional 5-15 minutes baking time.
