Creamy Bacon and Chive Topped Tomatoes
- 8 medium tomatoes
- 2 tablespoons olive oil, plus more
- 1/2 cup Daisy Brand Sour Cream
- 3 strips bacon
- 1 chopped chive
- 1 clove minced garlic
- 1 dash black pepper
Remove the cores of the tomatoes and cut in half horizontally. Lightly brown the cut sides of the tomatoes in a skillet with olive oil.
Combine the sour cream, cooked crumbled bacon, chives, garlic and black pepper in a bowl, while the tomatoes are cooking.
Carefully turn the tomatoes over and spoon an equal amount of sour cream mixture onto each tomato half. Add more oil, cover and cook until thoroughly heated, 2-3 minutes longer. Remove from heat and serve on platter.
