Creamy Cheesy Chicken Casserole

1         tablespoon  olive oil
2/3           cup  chopped onion
2             cloves  garlic -- minced
3               ribs  celery -- chopped
1 1/2           cups  sliced mushrooms
3        tablespoons  butter
3/4      teaspoon  salt
1/8           tsp  pepper
3        tablespoons  flour
2 1/2           cups  milk
3/4           cup  shredded cheddar cheese
8             ounces  pasta (any shape) -- cooked and drained
1 1/2         pounds  cooked
boneless skinless chicken breast -- cut into 3/4-inch cubes
1                tsp  fresh thyme
1/2           cup  light mayonnaise
1                     sleeve Ritz crackers crushed
1/4                butter -- melted
Heat olive oil in a pan over medium heat. Add onion, garlic, celery and mushrooms and cook till onions are translucent.

Add butter, salt and pepper and stir until butter melts.

Add flour and stir together.

Add milk and stir till mixture thickens slightly, do not boil. Remove from heat and stir in cheese till melted.

Stir in pasta, chicken, thyme and mayonnaise and turn mixture into a casserole dish.

Top with crushed Ritz crackers and melted butter.

Bake at 350 till heated through and golden brown on top, about 30 minutes.
