Creamy Chicken Bandito

This is an zesty southwestern dish that is easy and delicious. It can be prepared as a last minute meal or ahead of time to take to a gathering. It is always a crowd pleaser.
1 1/2 lb chicken breast (1" cubes)
1 T. Chili Powder
1/2 T. Cumin
12 oz box tricolor rotini pasta
1 16 oz jar of white corn/black bean salsa
1 8 oz block of cream cheese
1 medium onion
1/2 cup sweet pepper strips (mix of colors)
1 1/2 cups mexican cheese
Salt & Pepper to taste
Combine chicken, chili powder, and cumin.

brown the chicken and set aside to finish when baked

prepare your pasta al dente

cut your onion and peppers into strips

stir fry them in the pan you cooked the chicken to absorb the flavor

Add your salsa and the cream cheese to the pan and combine completly

add the pasta and the chicken back into the pan

stir until completely combined

salt & pepper to taste

poor into casserole dish

cover the top with cheese

bake for 20 minutes at 350

let it cool for 10 minutes and then serve
