Creamy LOW CALORIE sun dried tomatoe and spinach pasta!

i just came across a recipe similar to this but it was full of calories so i tweeked it a bit! only 250 calories per serving! it is completely vegan, vegetarian and full of vitamins my kids love it!!! i hope you enjoy!!!!
RECIPE INGREDIENTS
2 oz any pasta/macaroni
1-2 can of broth(vegetable, chicken, etc.)
3-5 sun dried tomatoes
1 clove of garlic, mashed
1/4 cup of chopped boiled spinach
1/4 small onion, chopped
1 pinch of dried oregano
1 pinch of dried basil
1 pinch of dried parsley
1 pinch of dried cumin
cooking spray(you can replace this with olive oil or butter but that will add the calories on!)
salt and pepper to taste
DIRECTIONS
Makes 1 serving---


1. Spray a medium sauce pan with a good amount of cooking spray, heat until sizzling then add mashed garlic, herbs, sundried tomatoes, and spinach until browned.


2. Add pasta, Turn heat to high, and add enough broth to cover pasta, bring to a boil and let reduce, add salt and pepper. repeat step 2 as many times as neccessary(except adding the salt and pepper) to make a creamy sauce(it takes me about 2-3 times)


3. Turn heat off and plate, let rest 2-3 minutes to allow to thicken. Enjoy!!!


-----this entire serving makes about a cup of pasta and is only about 250 calories!
