Creamy Scallop Crispy Cups

RECIPE INGREDIENTS
24 wonton wrappers
non-stick cooking spray
2 tablespoons butter
1 spring onion, sliced
2 tablespoons red cooking wine
3/4 cup Daisy Sour Cream
1 1/2 tablespoons Dijon mustard
8 ounces bay scallops
DIRECTIONS
1. Heat oven to 350 degrees F. Spray one side of each wonton wrapper with non-stick cooking spray. Press wonton wrappers, coated-side-down into miniature muffin cups. Spray each with non-stick cooking spray. Bake 10 to 12 minutes until golden brown. Remove from pans; cool.


2. Melt butter in large skillet over medium heat. Add spring onion, cooking wine, sour cream, Dijon mustard and scallops; cook and stir until scallops are cooked, about 2 minutes.


3. Spoon mixture into cups. Serve immediately.
