- 2 3/4 pounds pulled turkey, 3/8-inch dice
- 7 ounces celery, 1/8-inch dice
- 4 ounces sweet onion, 1/8-inch dice
- 11 ounces mayonnaise
- 3 ounces sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper, freshly ground
- 2 1/2 tablespoons fresh lemon juice
- 2 dashes hot red pepper sauce
- 1 1/2 teaspoons light soy sauce
- 1 3/4 cups tart apple (Granny Smith), 3/8-inch dice
Combine all the ingredients thoroughy and hold refrigerated in a covered container for at least 4 hours before serving. Serve as part of a salad plate or as a sandwich filling.
