Creole Pork with Rice

1 small green pepper diced
1 or 2 stalks of celery sliced or diced
1 med. diced cooking onion
2 or 3 slices crisp cooked bacon; reserving the grease to saute the above vegatables
4 to 6 pork steaks or chops
1 cup of uncooked long grain white or brown rice
2 TBSP. Brown Sugar
1 teas. salt
1 teas. basil leaves or Italian seasoning blend
1 1/2 Cups of water
15 oz can of tomato sauce (I have substituted Spagetti sauce and it worked fine.)

Using a large covered skillet to cook this entire dish. Fry the bacon till crisp remove cool and crumble. Saute the vegetables till slightly browned. Remove the vegatables to a dish temporarily while browning the meat over medium-high heat. After the meat is browned, add the remaining ingredients back into the pan and stir gently to blend. Cover and cook over medium heat for approximately 30 to 40 minutes till the rice is tender and the moisture is absorbed. Serve with a green vegetable and corn bread for a economical and easy to fix meal. A family favorite.
