Crispy Fried Artichoke Hearts

Golden brown fried artichoke hearts make a wonderful hot appetizer
1 can of Artichoke Hearts in Brine
2 cups of Olive or Canola oil
2 lg eggs
2 cups of seasoned Italian bread crumbs
1/3 cup of finely grated Pecorino Romano cheese
salt and pepper
Place artichoke hearts on paper towels or dish cloth to and pat dry

Gently cut the hearts in half

In a mixing bowl, combine bread crumbs and cheese

Beat eggs in bowl and dip each artichoke into egg mixture

Individually, roll artichokes into bread crumbs

Place in a dish and put in refrigerator for 15 mins. or until the mixture adheres to the artichokes

Pre heat oil in deep fryer or deep skillet

Gently place artichokes into hot oil and fry on all sides until golden brown.

Remove artichokes and place on rack or paper towel.

Salt and pepper to taste

(Optional: you can stuff the artichokes without halving with goat cheese for a delicious decadent stuffing)
