Crock Pot Turkey Thigh Chili

This recipe was born of expediency and the lack of time in the evening to cook the turkey thighs. I looked at ingredients I had in the pantry and decided to make a variant of chili.
2 turkey thighs
2 cans fire-roasted tomatoes
at least 1 large can kidney or black beans (can use more, depending on preference)
shredded cheese
sour cream
tortilla strips
Remove skin from thighs. Sprinkle thighs with your favorite blend of spices and herbs you would use when making chile; i.e. chili powder, cumin, granulated garlic, cayenne pepper, salt, cocoa powder, cilantro. Place thighs in the bottom of a crock pot. Combine fire-roasted tomatoes and beans and mix with the same seasonings used on the turkey. Pour tomato-bean mixture over meat in crock pot. Place lid on crock pot and cook on low from 6 to 8 hours. When ready to eat, remove turkey thighs from pot, remove meat from the bone and shred the meat. It will be hot, so use two forks for the shredding. Return meat to crock pot and mix with the tomatoes and beans. Serve with your choice of garnishes, such as shredded cheese, sour cream, sliced avocado, tortilla strips.
