Crockpot chicken w/veggie gravy

Great roast chicken with veggie gravy.
RECIPE INGREDIENTS
1 roasting chicken cut in 8 pieces
1 large chopped onion
2 large carrots sliced thin
2 stalks celery chopped
1/2 green bell pepper chopped
1 cup water
DIRECTIONS
Reduce roasting chicken to 8 pieces, brown using small amount of butter and oil. Put in crockpot.


Chop all veggies and saute onions in same skillet to lightly carmelize, add rest of veggies and cook until softened.


Put cooked veggies in crockpot with browned chicken and 1 cup water.


Cook on low for 8 hours or high for 4 hours.


Remove chicken and strain veggies.


Skim as much fat as possible from liquid and return to a sauce pan with the veggies. Puree with stick blender and further thicken if needed.


Serve with mashed potatoes with sauce on both the chicken and potatoes.
