Cuban Chicken Fricasse

Easy, authentic cuban staple served with white rice and black beans. Add some of the sauce from the chicken to the black beans to flavor the beans.
1 chicken fryer cut to 10-12 pieces
1 onion - chopped
3 garlic cloves- minced
1/2 green pepper- chopped
1 bay leaf
1 small can tomato paste
1 can diced tomatoes
6 oz dry white wine
1/2 T cumin
1/2 T Goya dry sazon
1 cup Goya pitted Alcaparrado or choped salad olives with pimento add 1 T capers
Saute onions, green peppers & garlic in olive oil in a large chicken fryer skillet.

Season chicken with goya sazon. Add to skillet and brown thoroughly.

Add all other ingredients. Bring to boil (might want to add water if sauce is too thick).

Cover and reduce heat to med for 30 minutes or longer till chicken is completely cooked.
