Because I love Cubano sandwiches, I decided to switch the ingredients up and turn them into a spicy meatloaf with pork instead of a traditional beef meatloaf. The Swiss cheese and ham filling is such a nice surprise.
8 oz.- Linguica sausage (fully cooked Portuguese style sausage) cut into 1” chunks
½ - medium, yellow onion /rough chopped
½ - sweet red bell pepper/ stem & seeds removed & rough chopped
4- cloves garlic/ peeled
2 TBS- orange juice
1 large- egg
¼ cup- evaporated milk
2 TBS- cumin
2 TBS-light brown sugar/ lightly packed
1 TBS- chili powder
1 TBS- smoked sweet paprika
2 TBS- Worcestershire sauce
2 tsp- Kosher salt
2 tsp- black pepper
1&1/3 cups - Panko (Japanese style bread crumbs)
2 lbs- ground pork
6 Slices - Swiss cheese/ square, sandwich cut
½ lb - ¼” thick, deli-ham slices
½ cup- honey Dijon mustard
Cubano Meatloaf Recipe at
Pre-heat oven to 375F degrees. Spray a 9”x13”x2” glass baking with a non-stick cooking spray.

1) In a food processor, pulse the 1” chunks of Linguica till it is minced, then pour it into a large mixing bowl.

2) Pulse the onion, red bell pepper and garlic in the processor, till minced, then add the orange juice, egg, evaporated milk, cumin, brown sugar, chili powder, paprika, Worcestershire sauce, salt and pepper, pulsing 2 more times, then pour the mixture into the bowl with the minced Linguica. Add the Panko and ground pork then mix everything together well.

3) Divide the meat mixture in half and shape the first half, in the prepared baking dish, into a rectangle shape, about 7”x11”. Place the sliced Swiss cheese onto the layer of meat, to within ½” of the edge, then lay the slices of ham, in the same manner, over the cheese. Spread the remaining half of the meat mixture over the ham, evenly, being sure to cover all of the cheese & ham, sealing them in. Spread the honey Dijon mustard over the top and place on center rack of oven. Bake for 1 hour 25 minutes or till done.

4) Remove from oven when done, let rest for 10 minutes before serving.
