Cucumber Salad

This can be used as a 'pickle/salad' item on your menu. Very easy to prepare and can be done the night before ready to serve the next day. You may think that 2 cups of sugar is a lot, but I tried it with less and it didn't taste right.
RECIPE INGREDIENTS
8 large cucumbers sliced
1 cup chopped celery
1 cup chopped onion
1 red pepper chopped
1 green pepper chopped
Sprinkle 2 tablespoons salt over this mixture and let stand for about 2 hours.  Drain off the juice.
DIRECTIONS
Syrup:


2 cups sugar


1 - 2 teaspoons mustard seeds


1 cup vinegar


Mix well until sugar is dissolved and pour over the vegetables. Put in jars or container. Let stand 4 hours or overnight. Refrigerate. Will keep in the fridge for up to 3 months.
