Curried carrot apple soup

This is a super quick, very healthy, tasty and sophisticated soup to serve as an appetizer.
RECIPE INGREDIENTS
5 medium carrots, peeled and cut into 1-inch chunks
1 Granny Smith (or other green) apple, peeled and cut into 1-inch chunks
1 1/2 tablespoons high-quality curry powder (or to taste)
1 tablespoon miso paste
1 tablespoon beef or chicken bouillon paste (may substitute vegetable bouillon to make vegetarian)
1 tablespoon butter
1/4 teaspoon sea salt
fresh ground pepper to taste
1/4 cup walnuts, chopped
Daisy sour cream
Fresh cilantro, for garnish (optional)
DIRECTIONS
Put carrots and apples into microwave-safe cooking dish and cover with water. Microwave for 6 minutes on high. Place carrots, apples, and cooking water into blender with the rest of the ingredients, except for sour cream. Blend on high until smooth. Serve immediately in small individual mugs, topped with a dollop of Daisy sour cream and a few cilantro leaves.
