Curried Turkey Ham Puffs - Pastry Puffs Only

  • 1/2 cup water
  • 1/4 cup margarine, at room temperature
  • 1/2 cup flour
  • 2 large eggs, at room temperature

Place one oven rack in the upper third of the oven and the other rack in the lower third of the oven. Preheat the oven to 425 degrees F.

In a medium-size saucepan over medium-high heat, bring the water and margarine to a boil. Remove from the heat; add the flour. Beat with a spoon until smooth. Reduce the heat to low; return the pan to heat. Continue cooking and stirring the mixture until it forms a ball (1 to 2 minutes). Remove from the heat and allow the mixture to cool 2 minutes. Using a spoon, add the eggs, one at a time, beating vigorously, until the dough is smooth.

On 2 ungreased cookie sheets, drop 24 rounded teaspoons of dough 1 inch apart. Bake the puffs for 15 minutes. Reduce the heat to 375 degrees F and continue baking the puffs fpr 15 minutes. Do not open the door during baking and do not remove the puffs from the oven until they are firm to the touch. Allow the puffs to cool completely.

Cut the puffs in half crosswise, and fill with Filling (see related recipe).
