Czechoslovakian Holiday Apple Strudel

  Makes: 2 Strudels
For the Dough:
2 cups organic unbleached flour
1/3 cup Wild Oats Organic butter
1 Wild Oats Large egg yolk (reserve egg white)
7 tablespoons cold water
Pinch salt
For the Filling:
1 cup bread crumbs
3 tablespoons Wild Oats Organic butter
2 pounds organic Granny Smith apples, cored, peeled and sliced
1/2 cup chopped dried apricots
1 tablespoon lemon juice
1/3 cup sugar
2 teaspoons cinnamon
1/4 cup Wild Oats organic sliced almonds
1/4 cup confectioner’s sugar
Preheat oven to 350 degrees F.

Work first five ingredients together until smooth. Place in a bowl, cover and refrigerate for an hour. Combine breadcrumbs and butter in a saucepan and heat slowly, while stirring, until well-coated. Set aside. Mix apples with apricots, lemon juice and cinnamon; set aside. Slice dough in half. Roll each half into a rectangle, about
1/4-inch thick. Sprinkle half the breadcrumbs over each half. Spread half the apples over each rectangle. Roll it closed and pinch the ends shut. Place strudel on a lightly greased baking sheet. Mix egg white with one-tablespoon cold water and brush it over the strudel. Sprinkle with almonds. Bake for 30 minutes. Sprinkle cooled strudel with confectioner’s sugar. Enjoy warm with vanilla ice cream or with a cup of coffee.
