Damson Plum Pork

Delicious and simple pork with an added twist. This is a recipe that is easy and quick.
RECIPE INGREDIENTS
4 - 1 inch Boneless Pork Cutlets
4 Shallots chopped
2 TBL Extra virgin Olive Oil
1 TBL Red Wine Vinegar
1/4 cup of Damson Plum Jelly
DIRECTIONS
Saute Pork cutlets in olive oil in a non-stick skillet until no longer pink; add shallots and continue cooking until just soft; add wine vinegar and damsom plum jelly for another 5-10 minutes


Serve over Jasmine Thai rice
