I use the habanero for orange color& for kick. Substitute jalapeño if you can't take the heat...this is very spicy, you have been warned. Oh yeah, of course use fresh picked NJ corn (july&August)!!!!
Ok, mine is -I've been told-pretty spicy:
For six servings
Cut corn from 4 cooked cobs (4 minute plunge in boiling water)
1/4 head of red cabbage sliced kind of thin then chopped into about 1" length
1 green bell pepper, chopped up to the size of 2 corn kernals
1 red bell pepper, same
1 orange bell pepper, same
1 habanero pepper ffinely chopped
4 golden cayenne peppers finely chopped
1 red onion diced
+/- 4 tablespoons of a mild tomato based hot sauce
Salt&pepper to taste
