Dee-licious & Nutritious Chicken Soup

This is a hearty 'chilly day' soup!
RECIPE INGREDIENTS
Soup
12 quart soup pot of cold water
1 whole chicken
4 cups celery (sliced thin)
4 cups carrots (sliced thin)
2 large yellow onions (coarsely chopped)
2 cups parsnips (sliced thin)
2 cups turnips (coarsely chopped)
1 10 ounce bag fresh spinach (coarsely chopped)
1 15 ounce can plum tomatoes
Salt & Pepper (to taste)
Meatballs
1 1/2 pounds ground chicken or turkey or lean beef
1 cup Parmesan cheese (grated)
3 eggs
Salt & Pepper (to taste)
1 teaspoon minced garlic
1 teaspoon onion powder
1/2 cup parsley (chopped)
1 pound Orzo pasta
DIRECTIONS
Soup:


1. Place whole (washed) chicken in soup pot of water.


(Bring to a boil, then simmer until chicken is done


about 45 minutes.)


2. While chicken is simmering, cut up all of the


vegetables.)


3. When chicken is done, remove from pot and place in a


bowl to cool.


4. Add all other ingredients (for soup) to the stock and


bring to a second boil.


5. When chicken is cooled, remove skin and pull chicken


off the bones, adding the 'chunks' of chicken to the


soup.


6. Let the soup simmer for about 1 hour.


Meatballs:


1. Mix all the meatball ingredients in a large bowl and


blend them together well.


2. Form meatballs into 1 inch size (bite-size)and add


them to the soup.


3. Continue to simmer until meatballs rise to the top of


the soup.


Pasta:


1. Cook orzo pasta according to directions.


2. When pasta is done, drain and add it to the soup.


Serve and enjoy!


(Can be garnished with more grated Parmesan cheese, if


desired)
