Diced Vegetable Salad

Pipirrana is one of the most popular accompaniments to summer meals and is one of a variety of salads comprising finely chopped ingredients, which are mixed thoroughly and then tossed with the dressing. It should be left to marinate for a while for the flavors to blend properly and is very refreshing on hot days.
- 2 green bell peppers
- 4 large tomatoes
- 2 onions, peeled
- 2 Kirby cucumbers of 1 small cucumber, peeled
- 2 eggs, hardboiled (optional)
- 1 small can tuna (optional)
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
Dice all the ingredients finely into 1/2 inch cubes and dress with the olive oil, vinegar and salt. Mix thoroughly.
Chill for at least 1 hour before serving.
