Ditilini & Ceci Soup (pasta & chick peas) Vegetarian

Old Italian recipe Mom & Pop used to make back in Philly on cold evenings. Good for one-pot meal.
1/2 large onion finely diced
1 cube vegetable broth
1 lb box Ditilini pasta
2- 15 oz. cans stewed tomatoes
2- 15 oz. cans Ceci (Chick Peas)
4-5 stems Parsley (leaves only) or 1- heaping T. of dried Parsley
Salt to season
Soy sauce to season
1/2 c.  macaroni cheese, grated
Saute onions in olive oil

Dissolve veggie cube in cup of hot water

Cook Ditilini in salted water, DO NOT DRAIN WATER

Add sauted onions, broth, stewed tomatoes, ceci, approximately 8 -10 minutes before pasta is cooked

Add soy sauce and parsley and stir just before removing from heat.

Serve in a soup bowl with a sprinkle of cheese on top


1 1/2 gallon of soup, depending on amount of water used to cook pasta. Adjust seasonings accordingly.
