A traditional Irish dish, Colcannon is both delicious and nutritious. Filling and just a wee bit spiced, it is comfort food at it's best! Add diced meat to it, such as leftover corned beef, and you have a wonderful main dish! Yummy!
Simply Potatoes 2-lb Family Size
6 cups boiling water
2 Tbls. Better Than Bouillon Reduced Sodium Chicken Base (or other low sodium bouillon)
2 small heads dark curly kale, tops only, chopped, and stems removed
1/2 cup milk
6 Tbls butter
3/4 teaspoon ground nutmeg, fresh or grated
3 teaspoons ground thyme
6 scallions, sliced
A handful of fresh parsley, chopped
Mix the bouillon in the boiling water and add the kale. Cover, reduce heat and simmer the kale for 10-12 minutes. (Discard the broth or save for another use.)

In a large skillet over moderate heat melt butter and add milk. Season with nutmeg and thyme, and add scallions to the pan. Remove kale from cooking liquid to the milk and butter mixture using a slotted spoon. Mix all together gently, then turn down to low to keep warm.

Meanwhile, peel film back at corner of Simply Potatoes package to vent. Heat on high in microwave for 3 minutes. Completely remove film and stir well. Microwave again on high for 1 minute.

Stir into kale mixture in skillet, mixing thoroughly but gently. Put into a serving dish and garnish with the chopped parsley. Serve immediately.
