Great way to use up Easter Eggs. I always make extra eggs for this casserole. The casserole can be made the day before. Just add the potato chips before baking and increase baking time to 30 minutes.
6 hard boiled eggs
4 tablespoons butter
4 tablespoons flour
1/8 teaspoon white pepper
2 cups milk
4 ounces shredded Swiss cheese
4 ounces shredded American cheese
12 slices crisp bacon-crumbled
1 1/2 cups crushed potato chips
Melt butter in skillet.

Add flour and cook 1 minute.

Add milk all at once, stirring to prevent lumps.

Stir in all cheese.

Remove from heat.

Butter a one-quart casserole dish.

Slice 3 eggs and layer in casserole dish.

Spread 1/2 of cheese sauce over eggs.

Crumple 1/2 bacon over sauce.

Repeat layer, and top with potato chips.

Bake 350 F for 15 minutes.

Makes 4-6 servings.
