I live in New Mexico and I use this a lot for potlucks. It has great flavor and not much fuss. The recipe is requested every time. This recipe makes a regular appearance on mexican night...
2 cups cooked white rice (leftover/Steamfresh/Minute Rice)
2 jars Pace Salsa (mild/medium/hot)
1 Tbsp sour cream
cayenne to taste
Cook the rice according to directions. Add salsa into large skillet and heat on medium. Add rice and mix well. Turn up the heat to medium high-high. Leave it sit for a minute at a time and then stir. You want it to get slightly sticky as the water from the salsa evaporates. Add sour cream. Cook until desired consistency. (We like it less saucy...we also use Pace Medium).
