I make this for my family as sandwiches with lettuce, tomatoes and dill pickles and or quests with saltine crackers and they love it. Ask for the recipe every time
1/4 inch piece all beef bologna (from service deli)
6-8 hard boiled eggs
salt and pepper to taste
3 Tbl. Mayonnaise
1 teaspoon reg. mustard or dijon
2 green onions thinly sliced whites only (optional)
1/2 jalapeno finely chopped (optional)
Boil eggs until hard boiled and put ice water on them for quick chilling and peel. Mince bologna then chop eggs in same bowl. Salt & pepper to

taste. Add mayo then mustard on top and mix. Should look like deviled eggs. Add the onions & jalapenos in the mix or just put them on top, or don't add them at all. Cut bread in shapes, any kind of cracker or chips go well. Fast and easy for a football dip or spread, or for just a sandwich.

Really good stuff
This is really good stuff. My Mom always made a Huge tupperware bowl full. Only? She used a Food Processor to make it like sandwhich spread. All the same ingredients but A LOT of bologna, From the Deli, then one more ingredient. A touch of sweet pickles.
