Easy Broccoli Rice Casserole

1 cup of basmati rice
1-12 oz package of frozen chopped broccoli
1 can of condensed cream of mushroom soup
2 cups of chicken stock
1 tablespoon butter
6 slices of American Deluxe cheese
Butter flavored cooking spray
salt/pepper to taste.
Preheat oven to 375 degrees Fahrenheit, and spray a 9x11 casserole dish with the cooking spray, and set aside.

In a pan, combine the rice, broccoli, stock, and butter and cook over med/hi heat until it starts to boil.

Take the pan off the heat and add the can of soup, stirring until completely mixed and add salt and pepper to taste.

Pour into the casserole dish that was sprayed with the cooking spray and lay the cheese squares on top of the mixture. Cover with foil and cook for 15 minutes. After 15 minutes, uncover the foil and give a quick gentle stir. Return to the oven for 10 more minutes or until bubbly and just getting a bit brown on top.

**Note: It is important to use basmati rice, as this rice does not stick or clump and creates a long grain, creamy rice dish that is good even for leftovers or to take to a potluck.
