Easy Brown Rice Medley

Delicious way to serve brown rice. Diabetic friendly.
RECIPE INGREDIENTS
1 Cup of Cooked/Drained Brown Rice
4 Large chopped mushroom caps (raw and diced)
2 Pieces of celery (raw and diced)
1/4 Red or Green pepper (raw and julienne d)
1 Small onion (raw and finely chopped)
2 Medium cubed fresh tomatoes
1 to 2 Tsp. Extra virgin olive oil
1/2 Tsp. lime juice
1/4 Tsp. cumin
1/4 Tsp. rosemary
1/4 Tsp. thyme
1/8 Tsp. chili powder
Salt and Pepper to taste
Optional: 5 Grilled strips of bacon (crumbled)
DIRECTIONS
Measure 2 cups water bring to a boil and add 1 cup of brown rice. Drain and set aside.


Add to the rice:


Spices, extra virgin olive oil and lime juice.


Veggie Prep: finely chop the onion and 2 celery pieces. Julienne the red or green pepper. Slice the mushroom caps and cube the fresh tomatoes. Add to the rice mixture.


Toss to evenly distribute the ingredients. Cover and microwave five minutes.


OPTIONAL: Grill bacon and crumble over the top.

One request
I wish your recipes that call for fresh veggies, i.e., celery, cukes, peppers, onions, tomatoes, etc., etc., would give a measured amount instead of/as well as "2 celery stalks," "one small onion," etc., etc. It would mean a lot for folks who are new cooks or insecure cooks!
