Easy Chicken and Rice

1 cup of Rice
2 cups of water
1 lb. of chicken cut in small pieces
Season salt and pepper
3 tablespoons butter divided
1 can cream of chicken soup
1/2 can of milk, skim milk or half n half
frozen peas and carrots may be added if desired or any veggie
Brown cut up chicken in butter.

Cook rice in 2 cups of cold water with 1 tablespoon of butter or margerine,cover and simmer for 20 minutes.

Shut off heat, do not uncover until ready to use.(Make sure all water is absorbed).

After chicken is cooked stir in soup and 1/2 can of milk or skim milk. (richer use half n half)

You can add frozen veggies, Peas amd carrots gives it a nice color flair as well as taste. (Use any frozen vegetable desired) simmer until veggies are cooked.

Season with season salt and pepper.

I usually mix everything together and serve in one dish, but you can serve as two dishes, rice and chicken with vegetables gravy mixture. Enjoy with a salad and roll.
