Easy grilled veggies

Healthy and diet consious, easy to prepare, easy to cook.
a green, orange, yellow & red pepper
a zucchini
an eggplant
2 red onions
a package of large mushrooms de-stemmed
a bottle of fat free italian or balasmic salad dressing (not creamy style)
Cut each pepper into 4 pieces. Save tops and bottoms for salads.

Slice zucchini, eggplant and red peppers into 1/2" thick slices.

Clean mushroom caps. Save stems for omelets.

Drop into plastic baggie(s) till 3/4 full.

Add small amount of dressing. You want to lightly coat both sides of each veggie.

Shake to spread dressing evenly.

Spray grill with cooking spray.

Grill on full flame about 3-4 minutes on each side for thicker veggies, 2-3 minutes for peppers.

Enjoy a super nutricious side extremely low in calories and free of fat.
