Easy Pecan-Cranraisin Chicken Salad

Vary basic salad by substituting sliced pear and candied walnuts for the pecans, cranraisins and tomatoes.
RECIPE INGREDIENTS
1 Supermarket BBQ chicken
1 head Romaine
pecans
Cranraisins
Crumbled blue cheese
cherry tomatoes
Raspberry vinegar
Olive oil
Jane's Crazy Salt (or salt & pepper)
DIRECTIONS
Remove meat from chicken and cut into bite sized pieces


Break romaine into bite sized pieces and arrange on individual plates


Heap a serving size of chicken on top of each plate of romaine


Cut Cherry tomatoes in half and arrange on the sides of the plates


Strew crumbled blue cheese around on each plate to taste


Strew tops of each salad plate with Cranraisins and pecans to taste


Prepare a vinigrette dressing:


Mix equal portions of Raspberry vinegar and olive oil with Jane's Crazy Salt (or salt and pepper) to taste
