Edemame Salad

RECIPE INGREDIENTS
1 lb. frozen, shelled Edemame (raw soy beans)
1 c. red bell pepper - diced
1 c. green bell pepper - diced
1 c. celery - diced
1/2 c. green onion - chopped
1 T. fresh flat leaf parsley - chopped
1 jalapeno - seeded and diced (optional)
Balsamic vinaigrette
Salt & black pepper
DIRECTIONS
Prepare edemame per instructions on the package.


Prep vegetables and combine all ingredients in a large bowl.


Dress with your favorite vinaigrette and season with salt and pepper to taste.


Mix well and chill for before serving.
