Eggless Cherry and White Chocolate Chip Cookies

"I've adapted this recipe from various sources and it is a foolproof hit every time. The vegan version is wonderful too! These cookies are fantastic fresh out of the oven or a day or so later - they stay soft in the middle and just melt in your mouth!
RECIPE INGREDIENTS
1/2 cup (1 stick) of softened butter (vegan butter works too)
3/4 cup sugar (white or brown)
1 banana (mashed)
1/2 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/3 cup milk (or soymilk/almond milk)
1/2 cup white chocolate chips
1/2 cup chopped dried cherries
DIRECTIONS
Preheat the oven to 325 degrees F.


You will need two separate


bowls. In the first bowl, cream the softened butter and the


sugar together until it is fairly fluffy. Add in the mashed


banana and vanilla extract and stir until the mixture is


smooth.


In the second bowl, stir together the flour and


baking soda.


Divide the dry mixture in half and gradually


combine it with the wet mixture, mixing until the dough is


fairly paste-like. Add in the second half and mix well. If


the mixture is too dry, pour in some of the milk until the


dough is thick and moist. Fold in the chocolate and cherries.


Make


sure your baking pan is lined and covered with a non-stick


spray. Drop spoonfuls of dough onto the pan, about


1 1/2 inches apart (they don't spread much). If you want a


more traditional round shape, you can also roll the dough


into balls and flatten it with the palm of your hand.


Bake


for 10 minutes, or until golden brown on the bottom and edges.
