Eggs Dijonnaise

  • 10 eggs, hard boiled, peeled, cut in rough chunks
  • 1/2 cup (or more) mayonnaise
  • 2 tablespoons Dijon mustard or to taste
  • 2 teaspoons maple syrup or to taste
  • White pepper to taste
  • Fresh spinach leaves
  • 8 thin slices of ham
  • 4 English muffins, split and lightly toasted
  • 1 cup shredded cheddar cheese


Preheat the oven to 400 degrees F.

In a medium bowl, gently mix together the eggs, mayonnaise, mustard, maple syrup and white pepper. Adjust the mustard, maple syrup and pepper to taste, if necessary. Place some spinach leaves and a slice of ham on each muffin half. Pile on about 1/3 cup of the egg mixture. Sprinkle with cheese.

Bake on ungreased baking sheet for about 10 minutes, or until heated through.
