4 eggs
1/2 onion
1 potato
pinch of crushed mint
salt and pepper
olive oil
1. peal the potato. you can use any kind of potato, red works best

2. dice up the potatoes

3. place the olive oil in the skillet wait till it gets warm then add the potatoes, add salt and pepper (according to how much you want to add)

4. place the heat under medium let the potatoes cook slowly.

5. add the diced onions and continue to cook on medium

6. take the four eggs, pinch of crushed dry mint, salt and pepper. mix those in a bowl till the eggs are scrambled.

7. once the potatoes and onions are moist add the eggs, then cook on high

Best served with Pita bread.
