THIS IS A DISH THAT MY WIFE AND I CAME UP WITH YEARS AGO AND IS A FAVORITE WITH ALL OUR FAMILY MEMBERS, EXCEPT OUR VEGETARIAN DAUGHTER!
RECIPE INGREDIENTS
2 BAGS SIMPLY POTATOES SHREDDED HASH BROWNS
2 TBSP VEGETABLE OIL
1 LB HAM, 3/4 DICE
4 STRIPS OF BACON
1 SMALL CABBAGE, QUARTERED, CORED, AND SLICED IN 1/2 INCH RIBBONS
1 LEEK, USE WHITE AND HALF OF THE GREEN PORTION, QUARTERED,RINSED, AND SLICED 1/2 INCH THICK
1 7 OZ BLARNEY CASTLE CHEESE, SHREDDED
1/2 PINT HALF AND HALF
3/4 CUP PANKO BREAD CRUMBS
1/2 TSP GROUND NUTMEG
SALT AND PEPPER TO TASTE
1/4 CUP PARSLEY, CHOPPED
DIRECTIONS
1. FRY HASHBROWNS IN 2 TBSP VEGETABLE OIL IN A LARGE SKILLET OVER MEDIUM HIGH HEAT, STIRRING OCCAISSIONALLY TILL GOLDEN BROWN. EMPTY INTO A LARGE BOWL.


2. FRY DICED HAM TILL NICELY COLORRED. EMPTY INTO THE BOWL WITH THE HASHBROWNS.


3. FRY BACON IN SKILLET TILL GOLDEN. CRUMBLE AND SET ASIDE. RESERVE DRIPPINGS.


4. PREHEAT OVEN TO 350 DEGREES F.


5. ADD CABBAGE AND LEEKS TO SKILLET WITH RETAINED BACON DRIPPINGS, STIR MIXTURE TO COAT. REDUCE HEAT TO MEDIUM, COVER AND COOK TILL SOFTENED AND BRIGHT GREEN IN COLOR, STIRRING OCCAISSIONALLY. ADD TO BOWL.


6. ADD 1/3 OF THE SHREDDED CHEESE AND THE HALF AND HALF TO THE INGREDIENTS IN THE BOWL, SEASON WITH SALT, PEPPER, AND GROUND NUTMEG. GENTLY FOLD ALL INGREDIENTS TOGETHER AND TURN INTO A BUTTERRED 9 X 13 INCH CASSEROLE DISH.


7. IN A SEPERATE BOWL, ADD CRUMBLED BACON, REMAINDER OF THE CHEESE, AND THE PANKO BREAD CRUMBS AND GENTLY MIX TOGETHER. SPREAD EVENLY OVER THE POTATO/CABBAGE BASE.


8. BAKE AT 350 DEGREES FOR 35 MINUTES.


9. LET COOL FOR 10 MINUTES. SPRINKLE WITH PARSLEY BEFORE SERVING. SERVES 8.
