Enchiladas with Sweet Corn Sauce

RECIPE INGREDIENTS
2 cups fresh bi-color corn
2 T. butter
1 can (4.5 oz) chopped green chilies
1 Tablespoon sugar
1 T. dried cilantro
3/4 cup milk
DIRECTIONS
1) Microwave corn with butter for 5 minutes in covered bowl.


2) Combine all ingredients.


3) Blend well in blender.


4) Pour enough to cover bottom of (sprayed) casserole dish.


5) Fill 4 -6 enchiladas with your choice of fillings.


6) Pour over all with sauce and top with cheese blend.


7) Bake at 350º for 30 to 40 minutes.
