A healthy and fast way to start your day...
1 Medium Potato
1 Medium Tomato
1 Medium Onion
1 Medium Capsicum
1 cub sprouted Mung Beans
5 Eggs
2 Green Chillies
1 small bunch of Coriander Leaves
1 tbsp light Olive Oil
Salt and Pepper to taste
2 slices of Cheese (optional)
Chop all the veggies into very small cubes.

Mix together the chopped coriander leaves, sprouted mung beans, salt and pepper. Set aside.

Add the olive oil to a heavy bottomed pan and heat for a min on medium flame.

Add the veggie mix and cover and cook on low flame for about 2-3 mins or until potatoes are soft.

Beat briskly 5 eggs for about 1 min.

Lightly fold in the beaten egg into the veggie mix and stir until egg is mixed well with the veggies.

Keep stirring until eggs are no longer runny.

Remove from heat and garnish with 2 slices of cheese on top.

Serve with fresh bread and lots of love.
