I come from Maine and grew up on fish chowder. But when I lived out west for a number of years I was influenced by where I lived and changed a few things.This is a very simple recipe and tastes even better the second day.
1 lb. carrots cut in pennies(do not need to peel,just scrub)
8-9 med. potatoes cut in large dice(leave on peels if you like)
1 lg. onion chopped
2 stalks celery sliced thin
salt to taste
1 1/2 to 2 lbs fish(cod, haddock or halibut)cut into bite size pieces
1/2 stick butter or margerine
1 can of evaporated milk
pepper to taste
water to cover vegetables

Add prepared vegetables to large pot.

Add just enough water to cover,salt and cook until tender.

Add fish to vegetables and simmer til fish turns white.(about 5-10 minutes)

Add butter, milk and pepper.

Do not boil after fish has been added.

When butter is melted chowder is ready.
