Forget about it Chicken Casserole

I developed this recipe when I was in college because the leftovers were fantastic, quick & easy to heat up. As a general rule, I don't measure. The measurements provided are approximate. So, feel free to adjust the ingredients to your taste, if you dare!
RECIPE INGREDIENTS
Chicken thighs (9)
1-2 cans Cream of mushroom soup
1 cp sliced mushrooms
1/3 cp chopped garlic (more or less to taste)
1 1/2 cps all purpose flour
1 tsp cayenne pepper (more or less to taste)
Kosher salt to taste
Fresh ground black pepper to taste
1/4 to 1/2 cp (good) dry white wine
DIRECTIONS
Pre-heat oven to 350 degrees F. Wash & dry the chicken. De-boning the thighs is optional, but recommended to save space & make this dish more of a pleasure to eat. If you want to eat bones, leave them in. It's your preference. But in any event, LEAVE THE SKIN ON!


In a 1 gallon resealable freezer bag, season the flour with cayenne pepper, Kosher salt & fresh ground black pepper and coat the chicken. Set aside.


Grease a 9" X 13" baking dish. Add the chicken (skin down), mushrooms, chopped garlic and cream of mushroom soup, making sure everything is submerged under the soup except the chicken. Bake uncovered 30 mins. on middle rack. Remove from oven, add the white wine and turn the chicken skin side up. Return to oven 15 to 20 mins. or until light golden brown. Enjoy!
