Fresh Pumpkin Soup

RECIPE INGREDIENTS
Olive oil
1 sweet onion chopped
2 -4 cloves of Garlic chopped
I small pumpkin peeled and sliced
2 cup veg broth
1 tie of rosemary and basil
Roasted pumpkin seeds
Crème Frachie
Truffle oil
Nutmeg
Black pepper
DIRECTIONS
Wash pumpkin seeds and toast in oven


Sauté the onion and garlic in large pot until soft and clear do not brown


Add the pumpkin and sauté until it states to get soft


Add the veg broth and herb tie


Boil briefly then cover and simmer for about half an hour


When pumpkin is very soft puree in a blender and return to pot on low


Serve topped with crème frachie, pumpkin seeds, nutmeg, black pepper, and a drizzle of truffle oil
