Best ever Homemade Chicken Strips
2 to 3 boneless/skinless chicken breasts
1/2 to 1 sleeve of salted soda crackers
1 egg - well beaten
1 to 2 tsps lemon pepper seasoning
peanut or canola oil for frying
Cut chicken into strips - about 4 per chicken breast. Set aside.

Place soda crackers in ziploc bag. Close and crush using a rolling pin (or pulse in food processor) to crumbs. Place cracker crumbs on plate add lemon pepper and stir to mix.

Put beaten egg in shallow bowl or small casserole dish.

Dip chicken strips in egg then coat with cracker crumbs.

Heat about 1 inch of oil in deep frying pan. When reaches about 350 degrees cook chicken on both sides until golden brown and cooked through.

Serve with your favourite dip.
