FRIED ZUCCHINI ROUNDS WITH CREAMY AVOCADO SALSA

RECIPE INGREDIENTS
1 pound frozen breaded zucchini rounds
Vegetable oil, for frying
2 large avocados, pitted, peeled, and cut into fine dice
1 tablespoon fresh lime juice
Pinch of ground cumin
Pinch of cayenne
1 serrano chile, seeded and minced
1/3 cup Daisy sour cream
2 tablespoons chopped fresh cilantro, plus extra for garnish
DIRECTIONS
Pour enough oil into a medium deep pan to reach a depth of 1 inch. Heat oil over medium heat and fry the zucchini (in batches, if necessary) until they are golden. Remove to paper towel-lined plate to drain.


Mix together avocado, serrano, cilantro, cumin, cayenne, and lime juice in a medium bowl. Gently fold in sour cream. Top each zucchini round with avocado salsa, garnish with a cilantro leaf, and serve.
