Frosted Lime Wafers

Finely shredded lime peel and lime juice impart an aromatic, citrusy note to these delicate cookie wafers, which also may be made with lemons or oranges. Use only the thin colored peel of these fruits, not the bitter white pith beneath.


  • For the Wafers:
  • 1 cup butter or margarine, softened
  • 1 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon finely shredded lime peel or 1 teaspoon finely shredded lemon peel
  • 1/3 cup lime juice or lemon juice
  • 2 1/4 cups all-purpose flour
  • For the Glaze:
  • 1 cup sifted powdered sugar
  • 3 tablespoons butter or margarine, melted
  • 1 to 2 tablespoons lime juice or lemon juice
  • Few drops green or yellow food coloring (optional)



In a mixing bowl, beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the sugar, baking soda and lime or lemon peel; beat till combined. Beat in the lime or lemon juice. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.

Drop the dough by rounded teaspoons, 2 inches apart, onto ungreased cookie sheets. Bake in a preheated 375 degrees F oven for about 10 minutes, or till the edges begin to brown. Remove the cookies from the pans and cool on wire racks.


In a small mixing bowl, stir together the powdered sugar, melted butter or margarine and enough lime or lemon juice to make a glaze. If desired, stir in food coloring. Dip the tops of cookies in the glaze.
